Ingredients

1 Eggplant
1/4 cup Peanut Oil
2 cloves, minced Garlic
1 Tbsp Hot Bean Paste
1 Tbsp Soy Sauce
2 tsp Sugar
1/4 cup Sesame Oil
1 Tbsp Rice Vinegar
1 tsp Sesame Oil
2 Tbsp, chopped Green Onions

      Trim eggplants, but do not peel. Cut into 1" chunks.
      Heat 3 tbsp of the oil in a wok; add eggplant, lower the heat to medium and stir fry 3 minutes or until soft. Remove from the wok and set aside.
      Heat remaining oil and stir fry garlic, ginger and bean paste 10 seconds. Add sugar, soy and water. Bring to a boil, add vinegar and reserved eggplant. Mix well with sauce and cook 1 minute until the sauce is absorbed. Blend in sesame oil and green onion and serve
