Ingredients

Stock
4 stalks Celery
4 Carrots
1 Leak
1 Large Parsnip
1 Turnip
1 clove Garlic
2 - 3 Chicken Carcasses
Vegetable Oil
Fresh Thyme
Fresh Parsley
Black Peppercorns
Soup
5 - 6, chopped Carrots
4 - 5 stalks, chopped Celery
1, finely chopped Parsnip
1/2, finely cubed Turnip
1, diced White Onion
Roughly chopped Fresh Parsley
Grated Ginger
Grated Lemongrass
Boneless, Skinless Chicken Thighs
Chopped Fresh Dill
2, chopped Green Onions

    Stock

    Roughly chop all of the vegetables. Break chicken down into smaller pieces.
    Brown the chicken in the oil. Add vegetables, Herbs & Spices and fill with water.
    Bring to a simmer, skim the scum off the top, and continue to simmer.

    Soup

    Cook onion on med-high heat, add vegetables, stir for a bit, and add the stock.
    Bring to a simmer. Add parsley, ginger and lemongrass.
    Bring to a rolling boil, add chicken, skim off the fat and continue boiling for 15-20 min.
    Remove thighs, shred with forks. Add back into pot.
    Add Dill, and Scallions. Season with salt & pepper.
    Cook noodles separately, serve and top with soup.
