Ingredients

Adjust Servings:
2lbs Medium Ground Beef
Yellow Cheese
Bacon
1 Cubanelle Pepper diced
1 Bell Pepper red or orange, diced
1 or 2 Jalapeno Pepper diced
2 Medium Onion diced
6 cloves Garlic minced
1 - 28 oz. can Tomato Purée
1 - 28 oz. can Diced Tomatoes
2 - 15 oz. cans Pinto Beans
1/4 cup Chili Powder
2 Tbsp Cumin
2 tsp Coriander
1 Tbsp Oregano
1 tsp Kosher Salt
2 Bay Leaves
12 oz. Beer

Bacon Cheeseburger Chili

    Smokey & cheesey chili, good for a cold fall day.

    Steps

    Cook bacon and burgers over direct heat, adding cheese. Move to indirect once browned.

    Mix spices and set aside.
    In dutch oven, heat 1-2 Tbsp of grape seed oil. Add vegetables, and sauté for a few minutes.

    Add garlic, cook for a minute. As spices and mix together. Add bacon and burgers, and mash together.

    Add tomatoes, beans, 2 bay leaves, 12 oz. Beer, and a handful of crumpled tortilla chips. Cover and simmer for 1 hour.
    Cook for another hour on indirect, cover off.
